Little G loves pancakes. Between that and pb&j, sometimes it’s all I can get her to eat. I like to use Jiffy’s Muffin mixes to make different varieties of muffins, but we can’t eat a whole box between the two of us. I used to mix half a box, but even then I’d end up wasting some. I know I could just use bisquick, or even make them with flour and baking soda, but even still, once you start halving thirds of a cup, things get annoying and complicated. So, I came up with this little trick, inspired by those bisquick jugs of pancake mix.
Using an old (cleaned) flavored creamer container, with the label removed I make enough pancake mix for the week.
First I add the muffin mix itself. Then in a cup with a spout I mix the egg, milk and whatever spices I have on hand (nutmeg, allspice, cinnamon, vanilla). I add that to the container, close the lid, and give it a good shake. Little G even gets in on the shaking action. Then I can pour as many pancakes as I want, close the container, and stick it in the fridge.
When I’m ready to make pancakes again all I do is add a little milk, and shake.
